Eat the World
Travel the world, learning about the cultures and histories of the longest living healthy global communities, and preparing an array of delicious plant-based dishes. Recipes include: Costa Rican nixtimalized corn tortillas, Grecian spanakopita pastries, Chinese potstickers, Spanish empanadas and Hawaiian cake!
Each live Zoom class, we will:
- Share announcements
- Watch a short video demonstrating the day’s recipe
- Prepare the recipe into our kitchens together
All course materials will be available for download, including weekly recipes, shopping list and videos.
Recipes will include use of equipment, such as knives, electric appliances (e.g. blender), range and oven.
The instructor will be providing active guidance and support via Zoom, during students’ recipe preparation.
Parent supervision is strongly recommended and encouraged.

INSTRUCTOR: Elisabeth DeSwart is a Registered Dietitian Nutritionist (RDN) and professor at Cuesta College & Cal Poly. DeSwart has also taught children’s nutrition and plant-based culinary courses in her community. Before becoming a dietitian, she was a chef for children, specializing in therapeutic diets. DeSwart loves science, bicycles & having fun in the kitchen.
