First You Make Roux: Gumbo at Home
Gumbo is more than a dish; it’s an experience. Louisianians don’t just eat gumbo; they “have a gumbo,” as in, “We’re having a gumbo on Sunday, come on over.” In this class, Sara Roahen will teach you how to prepare a proper chicken and sausage gumbo, from stirring a roux to the perfect shade of caramel-brown, to the final green onion garnish. Though the tasting during class will be a bowl of meat gumbo, students will leave with tips and recipes for a range of gumbos, including seafood, vegetarian, and gluten-free.
